Poultry Seasoning: Like many good chicken rubs our Poultry Seasoning has a bit of sweetness to it from the brown sugar and ginger root. When grilling the sugar helps form a nice crust to keep the juices in. Finally you'll note some very gentle hints of orange zest, nutmeg, and cloves. We're also big believers in salt free seasonings, but sometimes in order to make a seasoning become a great seasoning, you need a dash of salt and this was one of those times. For some of our customers they feel that this poultry seasoning needs a bit more salt - so if you feel the same way after trying it the first time by all means add a bit more salt to it the second time around. For best results we like to season our chicken for at least 2-4 hours prior to cooking to allow the seasoning to work its magic (place in the refrigerator and remove 30 minutes prior to cooking). We like to let it season for about 5-10 hours for optimum flavor (perfect when cooking on the weekend). We recommend using about 1 tablespoon of seasoning per pound of chicken. You can always add more if you feel that it needs a bit more.
